Never in my life have I ate a chili without some form of bean in it. If it doesn’t have beans in it then it isn’t chili

For us who don’t actively drink hooch but still like beer. May I recommend Athletic Brewing. They make a wicked N/A ipa and lager. Just saying.

I wish you had made a chili which combines the core elements of each.
Not one the chefs is a Texan. This invalidates all 3 recipes as real chili
I don't care for these competitions, because tastes are so subjective. That said, I learned to make chili on Cowboy Kent's recipe. And I cannot stand the taste of chipotle in there. I then change what I thought, to make it my own.

First recipe sounds good but who wants to pull bones out of the chili for a small bite? Pull the meat off and then add it… purée and paste why? purée is the same as paste with less water, one or the other and you’ll be fine

That was a good food you got from Mexico. Because even though you say its Tex mex,.the spices and the roots comes.from Mexico, from the states that used to be theirs. Soy de Panama, Iberoamerica to include Brazil.
Brian makes chili like I do as I use all of the same ingredients. The silver bone in one would have annoyed the hell out of me and most people.
Brian does have some good recipes, hands down. However, I’ve had such good results with Cowboy Ken’s recipes that I bought his cookbook.

Um… chili should have lots of chiles… Powders if you must, but whole dry chiles are way better. What’s with all the tomato sauce? Are we making a stew? Also, these were all chili AND beans. Chili doesn’t have beans… pink or white or red are a much better match for chili… when you serve it. If these sauces were actually cooked long enough, they might be a decent meat sauce for pasta.

True chili does NOT have beans. I will die on this hill.
I'd remove the bone-in meat from Matty's chili before serving and serve that on a plate alongside the bowl of chili. That way you're not having to deal with spooning ribs out when eating and can just enjoy the chili. It's kind of how I make Ragu alla Napoletana w/ short ribs, ribs, and sausage – these become the "second course".

The best chili recipe is on the back of the Lipton Beefy Onion box. If you want to add some flare go ahead. Add fritos and sharp cheddar cheese, heaven.
I don’t agree with score. I would give the winning chili first place just because he used short ribs. I would give Cowboy Ken second place because of the ground beef. I have to give the other one 3rd place because I believe that’s too much sofrito, 2 cooking spoons would’ve been enough and also I don’t want to go digging for bones inside my chili
