Crispy Chilli Beef & Potatoes

Serves 2

Ingredients
500g Beef Mince (Seasoned)
400g Potatoes (Diced)
1 Onion (Diced)
1-2 Red Chillies (Chopped)
1 Tbsp Garlic (Minced)
1 Tbsp Ginger (Minced)
1 Tbsp Tomato Puree
2 Tbsp Sriracha
3 Tbsp Sweet Chilli
1 Tbsp Brown Sugar
4 Tbsp Light Soy
2 Tbsp Rice Vinegar
80g Mozzarella (Grated)

Spring Onion (Garnish)
Fresh Chilli (Garnish)

Method

Begin by frying seasoned beef mince on a medium high heat for 5-6 minutes or until dark and crispy, draining any excess fat, then set aside.

In the same pan with added oil, fry diced potatoes for 8-10 minutes or until golden and cooked through, then set aside.

Add diced onion and chopped chilli to the pan, frying for a minute or two.

Add garlic, ginger and tomato puree, stirring through.

Then add, sriracha, sweet chilli, light soy, rice vinegar and brown sugar.

Stir and bring to a simmer for a couple of minutes.

Then return the beef and potatoes to the pan, mixing through.

Transfer everything to an ovenproof dish and top with grated cheese.

Place in a preheated oven at 190c (fan) for 5 minutes or until golden on top.

And that’s it!
