Ingredients:
For the rice:
• 1 tbsp oil
• 1 tsp garlic
• 1 tsp ginger
• 1/2 cup veggies (bell peppers, carrots, cabbage, spring onion greens)
• 1 cup boiled rice
• Salt and pepper to taste
• 1-2 tsp Chili Oil
For the sauce:
• 3 tbsp Schezwan Chutney
• 1 tbsp Dark Soy Sauce
• 1 tbsp Hot water
• 1 tsp garlic
• 1 tsp ginger
• 200 gm Paneer (cubed)
• Salt and pepper to taste
• Spring onion greens for garnishing
Procedure:
1. For the rice: Sauté garlic and ginger in oil, add veggies, cook for 3-4 mins. Add rice, season with salt, pepper, and chili oil. Mix well.
2. For the sauce: Mix Schezwan chutney, soy sauce, hot water, garlic, and ginger in a bowl.
3. For the paneer: Sauté garlic and ginger, add paneer cubes, cook until browned. Add sauce and cook until thickened.
4. Serve: Top the chili garlic rice with the paneer and garnish with spring onions. Enjoy!
