THINGS YOU’LL NEED:
1 tablespoon vegetable oil
2 pounds boneless chicken chopped (use chicken breast, thigh, or a combination)
1 large onion diced
2-3 jalapeno peppers diced – use bell pepper for milder heat
6 cloves garlic
2 tablespoons chili powder blend or more to taste
1 tablespoon ground cumin
1 teaspoon cayenne pepper optional, for extra spicy
Salt and black pepper to taste
2 tablespoons tomato paste
1 cup chicken broth or use beer – use 1.5-2 cups for a less thick chili
1 cup Buffalo sauce
2 cans fire roasted tomatoes with juices (15 ounce each)
2 cans kidney beans (15 ounce each) drained and rinsed (you can use other chili beans, like cannelini beans, etc)
Toppings. Crumbled blue cheese, extra Buffalo sauce, hot chili flakes, fresh chopped parsley, tortilla strips or chips

  1. What to do with leftover rotisserie chicken? Buffalo chicken sauce? Are these original ingredients, I don't think so but this recipe certainly is. I NEED to try this.

  2. love it! But I used chicken stock instead of water and boullion and instead of chicken I added black beans and crimini mushrooms with the kidney beans. We never miss the chicken.

  7. 😆Roasting peppers at home! I had visitors arrive when I was cooking with ghost peppers. It took them ages to stop coughing and spluttering. Now they always phone before coming over now. I love your recipes because I like hot but tasty food. Too many people just go hot for hot sake and that is so wrong to me

  8. I know people love the rotisserie chickens but they are junk food. Just roast your own. I have a counter top oven that roasts them in about an hour or so and they are .99 a pound. Stop ingesting those garbage Costco chickens, they are full of stuff you don’t want in you.
