Ingredients:
2 large bell peppers (red, yellow, or green)
250g chicken breast, chopped
200g sausages
150g cooked rice
100g diced tomatoes
1 onion
1 large carrot
100g sliced mushrooms
1 tsp paprika
1 tsp cayenne pepper
Salt & Pepper
Olive oil
50g Cheddar cheese
Instructions:
Prepare the soffritto:
Heat the olive oil in a large pan over medium heat. Add the chopped onions and carrots. Cook for 4-5 minutes until they soften and become aromatic.
Cook the chicken and sausages:
While the vegetables are cooking, slice the chorizo into 4-5 slices and add it to the pan, cooking until it releases color and flavor. Add the chopped chicken breast and sausages to the pan and cook for 5-7 minutes until the chicken and sausages are browned and cooked through.
Add spices and rice:
Add the paprika, cayenne pepper, salt, and black pepper to the pan. Stir to combine. Stir in the cooked rice and diced tomatoes, allowing the flavors to mix well and cook together for a few minutes.
Prepare the bell peppers:
Slice each pepper in half vertically if they don’t have a flat end to stand up. This way, they’ll cook more evenly. You can use a teaspoon to remove the white bits inside, which can be a bit bitter and hard to digest.
Stuff the peppers:
Fill each bell pepper with the prepared chicken and rice mixture, pressing gently to pack it in. If desired, sprinkle some shredded cheese over the top for added flavor.
Bake the stuffed peppers:
Place the stuffed peppers in a baking dish and bake at 180°C for 50 minutes or until the peppers are tender and the cheese is melted and bubbly.
Serve and enjoy:

I think this looks great as it is. Who needs bacon? I'll try it with the chorizo, and because I love spice and heat I'll add some Calabrian chilies as well. Now all I need to do is find a red bell pepper that's the size of a large man's shoe!
That is beautiful sausage… altho we are plant based now, I have fond memories of being a very young child with a chunk of bread in one hand and a large piece of dried Hungarian sausage in the other. Pure bliss!
I could imagine the soil that humongous pepper 🌶 grew in! Do you also have similar volcanic soil as around Catania, having in mind that you're quite away from Etna. The producer of the fine herbs 🌿 I buy from uses such one, which looks as it has little crystals in. Good recipe, will surely give it a try as I usually stuff my peppers with meat, tomato and rice only.
