  1. Paneer Pepper Masala Recipe
    Ingredients:
    For the Paneer:
    400g paneer, cut into bite-sized cubes
    4 tbsp cornstarch
    ½ tsp salt
    ½ tsp black pepper powder
    Oil (for frying or air-frying)
    For the Masala:
    2 tbsp oil
    1 medium onion, sliced
    1 sprig curry leaves
    2 dried red chilies
    2 green chilies, sliced on a bias
    1 tsp red chili powder
    1 tsp coriander powder
    ½ tsp cumin powder
    ½ cup water
    1 vegetable seasoning cube
    1 tsp soy sauce
    1 tbsp tomato ketchup or red chili sauce
    1 tsp cornstarch mixed with 2 tbsp water (slurry)
    Fresh coriander leaves for garnish
    Method:
    1.Prepare the Paneer:
    •Cut the paneer into bite-sized cubes.
    •In a bowl, mix cornstarch, salt, and black pepper. Toss the paneer cubes until evenly coated.
    •Lightly spray with oil of air frying or deep-fry till pgolden brown. Set aside.
    2.Make the Masala:
    •Heat oil in a pan and sauté the sliced onions, curry leaves, dried red chilies, and green chilies until onions turn translucent.
    •Add chili powder, coriander powder, and cumin powder. Sauté on low heat for 1-2 minutes until aromatic.
    3.Prepare the Sauce:
    •Pour in ½ cup water, crumble in the vegetable seasoning cube, and add soy sauce and ketchup (or red chili sauce). Stir well.
    •Let it simmer for a couple of minutes.
    4.Thicken the Gravy:
    •Stir in the cornstarch slurry and mix well. Adjust the gravy consistency by adding more water if needed.
    5. Finish & Serve:
    •Add the crispy paneer cubes to the pan and toss well in the sauce.
    •Garnish with fresh coriander leaves and serve hot.
