Ingredients:
Peppers:
* 5 bell peppers (tops removed, seeds cleaned)
Stuffing:
* 400g ground beef
* 2 carrots (grated or finely chopped)
* 1 onion (finely chopped)
* 2–3 garlic cloves (minced)
* Handful of parsley and cilantro (chopped)
* 2 tsp salt
* ½ tsp black pepper
* ½ tsp paprika
* 1 tsp dried oregano
* 100g rice (uncooked)
* 100ml water
Sauce:
* 2 tbsp sour cream
* 1 tbsp tomato paste
* 200ml water
Instructions:
1. Prepare the Stuffing:In a large bowl, combine ground beef, carrots, onion, garlic, herbs, spices, rice, and 100ml water. Mix everything thoroughly.
2. Stuff the Peppers:Fill each bell pepper with the beef and rice mixture. Don’t pack too tightly to allow rice to expand.
3. Make the Sauce:In a small bowl, whisk together sour cream, tomato paste, and 200ml water.
4. Cook:Place the stuffed peppers upright in a Dutch oven or deep baking dish. Pour the sauce over and around the peppers.
5. Bake:Cover with a lid or foil and bake at 400°F (200°C) for 1 hour.
6. Serve:Let them rest for a few minutes before serving. Enjoy!
