🌶️ Dry Chilli Mushroom Recipe

Ingredients

For Frying the Mushrooms:
• 200g button mushrooms (halved or quartered)
• 3 tbsp cornflour
• 1 tbsp Brother powder
• 1 tsp White pepper powder
• 1/2 tsp salt
• Water (as needed for batter)
• Oil for deep frying

For the Sauce:
• 1 tbsp oil
• 1 tbsp finely chopped garlic
• 1 tsp chopped ginger
• 2 green chilies, slit or chopped
• 1 medium onion, cubed
• 1 small capsicum (bell pepper), cubed
• 2 tbsp soy sauce
• 1 tbsp red chili sauce (adjust to heat)
• 1 tsp vinegar
• 1/2 tsp sugar
• Salt to taste
• Spring onion greens (for garnish)

Instructions

🔹 1. Prepare Mushrooms
1. Clean and cut mushrooms. Pat them dry with a paper towel.
2. In a bowl, mix cornflour, maida, salt, pepper, and just enough water to make a thick coating batter.
3. Toss mushrooms in the batter until well coated.
4. Heat oil and deep fry mushrooms on medium-high heat until golden and crisp.
5. Remove and drain on paper towel.

🔹 2. Stir-fry
1. Heat 1 tbsp oil in a wok/pan.
2. Add garlic, ginger, and green chilies. Sauté until aromatic (30 seconds).
3. Add cubed onions and capsicum. Stir-fry on high heat for 1-2 minutes (keep them crunchy).
4. Add soy sauce, chili sauce, vinegar, sugar, and a pinch of salt. Mix well.
5. Add the fried mushrooms and toss everything on high heat for 1-2 minutes until well coated.
6. Garnish with spring onions.
