INGREDIENTS:
1 medium cassava
water as needed
2 tbsp avocado oil
1 tsp onion powder
1 tsp garlic powder
1 tsp smoked paprika
1/2 tsp cayenne pepper
generous pinch salt
2 tbsp plantbased mayo
1 tbsp chili oil
DIRECTIONS:
1. Remove the top and tail. Then, peel using a vegetable peeler. Chop into fries/sticks and transfer to a mixing bowl. Add just enough water to cover the cassava and let it soak for about 5mins
2. Drain the water and transfer to a pot. Fill with just enough water to cover the cassava and bring to a boil. Preheat the oven to 400F. Boil the cassava until fork tender, then drain the water
3. Add the avocado oil, onion powder, garlic powder, smoked paprika, cayenne pepper, and salt. Toss to coat, then spread onto a baking tray. Bake in the oven for 30-35mins
4. Make a sauce by combining the plantbased mayo with the chili oil

But u have to peel all the skin off, otherwise u get a stomach ache. Veg peeler won’t take all the skin off.

What are you doing???! I'm Paraguayan, cassava is our GOD, we eat everyday combined with anything. But we would NEVER cook like that. Just cut in BIG chunks and cook it in salt and water to preserve the texture. Drain and be happy! Eat it with meat, eggs, as a side dish, mashed like potatoes, make empanadas, pasagua mascada…love it ❤🇵🇾
But is it better than potatoes though?

In ghana we boil it together with green plantain, cocoyam or yam and pound it to make a dough called fufuo which we eat with different types of soups. However use a knife to peel cassava not a peeler.
