Yesterday was my father’s birthday. He was born in 1918 and would have been 107 years old. Unfortunately, he is no longer with us, but I thought I would show you how to make one of his favorite sandwiches – Roasted Red Pepper Sandwiches. He grew up eating these during The Great Depression since they are cheap and filling. My parents used to eat these often during the summer when peppers were in season. They make a nice light meal when it’s too hot to cook.

Sandwiches look delicious. But can I suggest to keep your kitchen cooler in this heat , using a toaster oven would be great for toasting the rolls when you only have one or two. Are you Italian or polish background? . I know you have made both perogees and eat herring. Just wondering?

What a lovely summertime lunch! So happy whenever you put up a new video. Our garden is bursting with green, red, yellow and purple sweet peppers. My husband has several friends here whose parents immigrated to Ontario in the late 1800s. They will love this. They are all getting close to ninety. We kind of adopted them because our grandparents are gone now. My paternal grandmother was born July 22, 1913. My garden looks so much like her big kitchen garden on their lovely farm. Take care.
