Recipes
(ingredients I used:)
* Please watch video for cooking instructions*
1.) Stuffed Butternut Squash
2 med-large Butternut Squash
1 Head Garlic
2-3 Tbsp. Oil to roast
Bake 45m at 350 degrees
*Note: You will be using the reserved squash and roasted garlic for the stuffing mix
Stuffing:
Oil
1 small White Onion, diced
1 small Red Bell Pepper, diced
*Add water as needed to deglaze pan and add reserved roasted garlic
2 Beyond Meat Burger Patties (They also sell the Ground Beef packets, I suggest using that one if it’s available to you)
*Add Butternut Squash
Flax Egg (1 Tbsp. Ground Flax Seeds + 1 Tbsp. Water) let this sit for 3 min. until it thickens
1 small pkg Frozen Sweet Corn (defrosted)
Started with 1 tsp. Nutmeg + 1 tsp. cumin (add more to taste)
Salt & Pepper (to taste)
*I suggest adding 1-2 tsp Oregano as well
Top with vegan cheese and bake until it melts (15 min or so)
* I recommend using Chao Cheese slices or the DAIYA cutting board shreds. The one I use in the video is all I had access too and it totally changes the flavor. This is completely optional, this recipe taste great without the cheese!
2.) PUMPKIN WALNUT CHILI (Recipe from Purple Carrot Menu)
Oil
1 cup White onion, diced
5-6 garlic cloves, minced
40.2 oz Kidney Beans (about 5 cups cooked beans)
3/4 cup walnuts, chopped
3 Tbsp. Alamo chili seasoning (you can sub this for chili powder or other chili seasoning of choice)
1 tbsp. Mexican oregano
Salt (to taste)
2 cans (about 3 cups) Fire-Roasted Tomatoes (I blended mine a bit)
Pumpkin Puree (recipe calls for 1.5 cups, but I used less because I didn’t want a strong pumpkin taste)
Toppings: Vegan Sour Cream, Avocado, and Sliced Jalapeño
3.) Apple Cinnamon Bread
1/2 cup Brown Sugar
1 tsp. Apple Pie Spice
1 tsp. Cinnamon
* Mix together, set aside
1-2 Apples of choice (I used Gala), peeled and cube
2/3 cup organic sugar
1/2 cup vegan butter
* Mix until smooth
2 tsp. vanilla extract
1/3 cup apple sauce
* Mix
1.5 tsp Baking Powder
1.5 cups Organic/Unbleached All Purpose Flour
* Mix until combined
1/2 cup Soy Milk
*MIx
In a prepared baking pan (grease+flour), add batter, press cubed apples on top, and add brown sugar mix on top.
*You can pour half the mixture in a regular bread pan, add apple and sugar mix, add remaining batter and again add apples and sugar mix so it has a apple cinnamon layer in the middle.
BAKE for 25 min at 350 degrees for my quad bread pan
for a regular bread pan, I would start at 35min and keep an eye on it. It may take 40-45m to cook
Let Cool before serving or slicing.
