  1. Remember, wings used to be a LOT cheaper, and a lot smaller too. Deviled bones sounds like it’s probably appropriate for the time.

  2. I first learned about deviled bones when I was a teenager reading That Hideous Strength by C.S. Lewis. The scene where they're mentioned sticks with me to this day because I had no idea what they were talking about and was very curious to find out.

  6. Mushroom ketchup is wonderful! I love making it, then drying out the minced mushroom bits to use in stews, etc.

  7. I can actually get mushroom ketchup at my local grocery store funnily enough, I picked it up with the intent of adding some umami flavour to various dishes. Also the other interesting thing I discovered from Adam Regusea is using Worcestershire sauce as a substitute for fish sauce in Pad Thai, as the dish is flavoured with tamarind, and Worcestershire sauce is essentially a fish sauce flavoured with tamarind, and you can use it in plenty more Asian dishes if you like that extra kick of tamarind, and it's a pretty cost-effective solution as fish sauce tends to be one of those ones you end up buying a full bottle to use a couple of tablespoons before it sits at the back of the cupboard and is out of date the next time you want to use it.
