In a Bowl:
Mutton – 1kg (60gms piece size)
Add Salt – 1.5 tbsp
Turmeric powder – half tsp
Red Chilli powder – 2 tbsp
Ginger Garlic paste – 3 tbsp
Slitted Green Chillies – 10 Count
Keep aside

Pressure Cooker:
Oil – 200ml
Pure Bufffalo Ghee 100ml
Cardamom – 12
Cloves – 12
Cinnamon – 4 inches
Shahi jeera – 1 tsp
Bay leaves – 2
Chopped Onions – 3 Medium size
Fry for 2-3 Mins on Medium Flame
Add Mutton with all Masalas
Fry for 4-5 Mins on Medium Flame
Mint leaves – 2 handfuls
Coriander leaves – 2 handfuls
Fry for 2 Mins on Medium Flame
Add Curd – 200gms
Cook until the curd melts
Add Milk – 100ml
Cook for 2-3 Mins on Mdeium Flame
Add Chopped Tomatoes – 3 Medium size
Mix once
Add Water – 200ml
Close the cooker lid & pressure cook for 3 whistles
Open after 10 Mins (Mutton cooked 90% )
Transfer the mutton to the handi

Rice Part:
Basmati Rice – 1kg – 4 Glasses
Wash 3 times and keep aside.

Separate Vessel:
Water 4 litres
Cardamom – 5 count
Add salt – 4 tbsp
Boil for 2-3 Mins on High Flame
Add Washed Basmati Rice
Mix 2-3 times
Boil rice for 80% only
Drain water and add to the muton gravy in handi
Mix the rice with Masala gravy 2-3 times slowly
Add Sauted Cashews – 20 count
Buffalo Ghee – 4 tbsp
Close the lid and put the weight on Handi.
5 Mins on High Flame & 15 Mins on Low Flame
Open after 10 Mins
