Texas Chili PT 2 cooking

All the steps to have it simmering till tender
5 to 6 lbs cubed or ground meat. 1/2 lb chorizo optional 1 large yellow onion fine chopped 1 bunch of scallions 4 to 6 cloves garlic minced 1 stalk of celery fine chopped 1 14oz can roasted crushed or chopped tomatoes 1 to three each Ancho, Cascabel and Pasilla Chiles depending on level of heat you want. 3 roasted Piquillo Chiles kosher salt to taste 1 tbsp Chili powder 1/2 tsp each Black and White pepper 1 tsp Hungarian Paprika 1 tsp Ancho chile powder 1 tsp cumin/comino 1 tsp each garlic and onion powder 1 tsp each granulated garlic and onion this will be hot eough to make your head sweat just a bit but will not burn you up
