Chef Tatung’s Homemade Kikiam served with Manong Sauce and Kanto-Style Vinegar is a nostalgic Filipino favorite—perfectly seasoned and made from scratch, just like the ones you crave from your childhood merienda or street corner stop.

Ingredients

Blend
– ½ Kg Fresh Galonggong, cleaned and deboned
– 3 Cloves Garlic
– 1 Thumb Ginger
– 1 Tsp Salt
– ½ Tsp Baking Soda
– 1 Tsp Baking Powder
– ½ Tsp Five-Spice Powder
– ¾ Cup Cornstrach
– 2 ¼ Cup Flour
– ½ Cup Cold Water
– ⅓ Cup Vegetables Oil
– 1 Sachet Maggi Magic Sarap
– 1 Tsp Black Pepper
– 1 Tbsp White Sugar

– Add water to adjust

– Boil & Fry

For Manong Sauce
Ingredients
– 2 Cups of Water
– ½ Cup Brown Sugar
– 6 Tbsp Soy Sauce
– ¼ Cup Oyster Sauce
– 2 Tbsp Flour
– 1 Tbsp Cornstarch
– ¼ Cup Onion, minced
– 1 Tbsp Garlic, minced
– 1 Pc Red Chili, chopped

For Vinegar Dip
Ingredients
– 1 Cups Vinegar
– 1 Tsp Salt
– ¼ Cup Onion, minced
– 1 Tbsp Garlic, minced
– ¼ Cup Brown Sugar
– 1 Pc Red Chili, chopped

Wala pa Ako Nakita na doctor here in Philippines na nag sasabi na may health benefits ang magic sarap,

  9. ako by accident lang, ginamit ko sardinas na delata, I remove the excess sauce, nilagyan ko ng itlog, harina, minced onion and garlic tapos paminta, sugar, asin. nag lasang kikiam sya. 😂😂😂
