Ingredients
• 1/4 cup extra virgin olive oil
• 1 pound mild or hot Italian sausage, cubed
• 1 red pepper, thinly sliced
• 1 green pepper, thinly sliced
• 2 small yellow onions, thinly sliced
• 1 tsp sea salt
• 1 tsp ground black pepper
• 1 tsp dried oregano
• 1 tbsp garlic, minced
• 4 tbsp tomato paste
• 1 cup white wine (I used a Pinot Grigio)
• 1 15 oz can diced tomatoes, drained
• Parmesan cheese, optional
Instructions
• Gather all ingredients. Wash and slice peppers and onions. Cut Italian sausages into 1-inch cubes.
• In a large skillet over medium heat, add olive oil. When hot add the sausages and cook until brown on all sides, about 8 to 10 minutes. Remove from the skillet into a bowl or dish and drain fat, if desired.
• With the same skillet, over medium heat, add the peppers, onions, garlic, salt and pepper and cook until peppers and onions soften and turn golden brown, about 5 to 6 minutes. Add the oregano and cook 2 to 3 more minutes.
• Add the tomato paste and stir until well combined. Add the white wine and tomatoes. Stir to combine ingredients until well mixed and simmer mixture for 4 to 5 minutes.
• Add the sausages back to the pan and cook until sauce thickens, about 15 to 20 minutes.
• Serve on fresh sandwich rolls, pasta or rice, if desired.
• Garnish with Parmesan cheese, if desired.
