*3 High-Protein Veg Starter Recipes – Soya Schezwan Dry, Soya Manchurian, Crispy Soya Honey Chilli*
*For each individual starter recipe:*
Prep time: 10 minutes
Cooking time: 20 minutes
Serves: 4-5 people
*Ingredients:*
GARLIC | लहसुन 15–20 CLOVES
GINGER | अदरक 1 INCH
GREEN CHILLI | हरी मिर्च 3 NOS.
CAPSICUM | शिमला मिर्च 1 MEDIUM SIZED
ONION | प्याज़ 1 MEDIUM SIZED
SPRING ONION | हरा प्याज़ 2 NOS.
*Boiling & Frying Soya Badi (this process will also be common for all the 3 starters)*
SOY SAUCE | सोया सॉस 2 TSP
GINGER | अदरक 2 INCH (ROUGHLY SLICED)
GREEN CHILLI | हरी मिर्च 1 NO. (SLIT)
SALT | नमक A PINCH
SUGAR | शक्कर A PINCH
FORTUNE SOYA BADI | फॉर्चून सोया बड़ी 100 GRAMS
CORN FLOUR | कॉर्न फ्लोर 2–3 TBSP
*Method:*
Add the garlic, ginger & green chilli into a chopper & chop it coarsely, do not chop it finely.
Cut the capsicum & the onion into triangular petals or just dice them according to your convenience.
Cut & separate the white part from the greens of the spring onions, roughly chop the whites & finely chop the greens, keep them in separate bowl.
Set a stock pot with water over high heat & let it come to a boil, add ginger, green chilli, soy sauce, salt & sugar. This will add an amazing flavour to the soya badis.
Add soya chunks & let them boil for 5 minutes, meanwhile keep a large bowl with fresh water ready to rinse the soya chunks.
Once boiled, strain the soya chunks & add them into the water & rinse them by stirring.
Next, squeeze them gently (do no squeeze out all the water) & transfer them into a large bowl.
Add corn flour a couple of tablespoons at a time & coat the chunks with it using a spatula or a spoon.
Make sure you keep the oil ready at 170°C (moderately hot) before coating the chunks.
Once coated fry the soya chunks in oil for a few minutes until crisp then strain them out into a sieve, fry in batches. Your crispy soya chunks are ready.
*This prep will be common for all 3 recipes.*
*Soya Schezwan Dry:*
OIL | तेल 2 TBSP
HOMEMADE SCHEZWAN SAUCE | होममेड शेज़वान सॉस 2 TBSP
RED CHILLI SAUCE | रेड चिली सॉस 1 TSP
KETCHUP | केचप 1 TSP
VINEGAR | सिरका 1/2 TSP
WHITE PEPPER POWDER | सफ़ेद मिर्च पाउडर A PINCH
SUGAR | शक्कर A PINCH
SALT | नमक TO TASTE
HOT WATER | गरम पानी AS REQUIRED
CORN FLOUR | कॉर्न फ्लोर 1 TBSP
WATER | पानी 2 TBSP
*Soya Manchurian:*
OIL | तेल 2 TBSP
DARK SOY SAUCE | डार्क सोया सॉस 1 TBSP
LIGHT SOYA SAUCE | लाइट सोया सॉस 2 TSP
RED CHILLI SAUCE | रेड चिली सॉस 1 TBSP
KETCHUP | केचप 1 TBSP
WHITE PEPPER POWDER | सफ़ेद मिर्च पाउडर A PINCH
VINEGAR | सिरका 1/2 TSP
SALT | नमक TO TASTE
HOT WATER | गरम पानी AS REQUIRED
CORN FLOUR SLURRY | कॉर्न फ्लोर स्लरी 1 TBSP CORN FLOUR + 2 TBSP WATER
FRESH CORIANDER | हरा धनिया A HANDFUL (ROUGHLY CHOPPED)
*Crispy Honey Chilli Soya:*
OIL | तेल 2 TBSP
RED CHILLI SAUCE | रेड चिली सॉस 1.5 TBSP
KETCHUP | केचप 2 TBSP
LIGHT SOY | लाइट सोया 1 TSP
VINEGAR | सिरका 1/2 TSP
WHITE PEPPER | सफ़ेद मिर्च A PINCH
SALT | नमक TO TASTE
HONEY | शहद 2 TBSP
HOT WATER | गरम पानी AS REQUIRED
CORN FLOUR SLURRY | कॉर्न फ्लोर स्लरी 1 TBSP CORN FLOUR + 2 TBSP WATER
WHITE SESAME SEEDS | सफ़ेद तिल FOR GARNISH (TOASTED)
*Method:*
The method for tossing all the 3 starters is the same, only the sauces added are different.
Set a wok over high heat, add oil & let it get hot.
Add the chopped ginger, garlic, green chilli, stir well & cook over high flame for a few seconds.
Add all the sauces with white pepper & salt, stir well & let the sauce come to a simmer.
Add a splash of hot water to adjust the consistency of the sauce then add the corn flour slurry to thicken the sauce.
Now add the fried soya badi along with capsicum, onion & spring onion whites, stir well & coat the soya chunks with the sauce, lastly add the spring onion greens & your delicious, hatke Soya Schezwan Dry / Soya Manchurian / Crispy Soya Honey chilli is ready.

take some fortune oil and heat it then add all the garam masalas (zeera , kalimrich, tejpaat, dalchini) then add 1 sliced onion and fry it until golden and then add chopped ginger and garlic and then add some chopped tomatoes , chopped bell peppers, chopped green chillies ,and add spices (red chilli powder, haldi ,dhaniya powder and salt ) and cook all the veggies for 4-5 minutes until they release oil, now add the FORTUNE SOYA BADI to it and mix well and then add rice to it and add some water and salt accordingly and then pressure cook it for 2 whistles … “and then tastiest MIX VEG SOYA PULAO is ready”

You mentioned red chilli sauce in your recipe. But there are so many varieties and brands out there that can change the taste. Can you share which chilli sauce you use?
Soya tikki recipe –
Boil the soya chunks in hot water then drain the hot water, rinse the chunks in room temperature water, and then squeeze all the water from the chunks.
Now add the soya chunks in the mixer-grinder and now add some dry spices with handfull off coriander and mint leaves, mix all properly and then shape them like tikki and shallow fry them in oil , serve it with green chutney
I use fortune soya chunks for making soya kababs, to make high protein starter for my son, sometime use as burger tikki also
Mince the boiled soya chunks, add paneer, finely chopped mixed vegs, little grated beetroot, oats flour ,little besan, for binding, coriander, chillies and masalas to make spicy chatpata mixture
Make tikkis, coat in a cornflour +maida batter n then roll in crushed cornflakes. Fry n serve hot with sauce of choice
