Easy Vegan Chili 🌶️ Recipe

  1. Vegan Chili 🌶️

    Ingredients:
    * 2pk McCormick chili seasoning
    * 2pk Impossible ground
    * 1 large onion
    * One 28 oz can crushed tomatoes
    * 1 cup water (see note)
    * 2tbsp Better Than Bouillon No Beef Base (see note)
    * 2 29oz can beans rinsed and drained (kidney, pinto, or black)
    * 2tbsp brown sugar
    * Salt to taste 1tsp to 3tsp (depending on your palate, you might not want to add any salt)
    * Toppings: shredded cheese, corn chips, sliced jalapeños, sour cream, etc.

    Directions:
    1. Heat 2tbsp of vegetable oil in a heavy saucepan over medium-high heat. Add the onion and sauté for 3-4 minutes. Add the vegan ground meat and cook, stirring, until no longer pink.
    2. Add the chili seasoning mix and sauté until meat is coated with spices. Add the crushed tomatoes, salt (if adding), and 1 cup of water and beef-less bouillon and bring the mixture to a boil.
    3. Reduce heat and simmer, partially covered, for 20-25 minutes, stirring occasionally. Add the drained beans during the last 5 minutes of cooking.
    4. Serve with your favorite toppings.

    *Note: If you don’t have bouillon, you can use 1 cup vegetable broth and skip adding water.

  2. Looks so yummy!! I’m a meat eater but after being vegetarian for 5 years, I still cook vegetarian dishes. In my veggie chili, I add one sweet potato, Serrano pepper, and rehydrate dried chipotle chilies. It’s life affirming, babe! 😊
