Spicy roasted tomato pasta 🔥❤️
Ingredients:
150g M&S high protein fusili pasta
1 large red bell pepper
4 medium sized M&S round tomatoes
1½ cup of M&S cherry tomatoes
1 whole garlic bulb
M&S Extra Virgin Olive Oil, for drizzling
1 tbsp pepper powder
Salt to taste
3/4 cup of M&S creamy cottage cheese
8-10 cashews
1/2 cup of M&S chickpeas
1/2 tbsp chilli powder (adjust to your taste)
1 tsp cumin powder
1/2 tbsp onion powder
Chopped herbs of choice and red chilli flakes for sprinkling
Recipe:
1. Add the veggies on a lined baking tray and drizzle olive oil alongside pepper powder and salt. Bake for 30 minutes at 200°C. When it’s baked, let it cool completely.
2. Add the roasted veggies to a blender with the cottage cheese and cashews. Blend until smooth.
3. Add the blended mixture to a pan alongside the chickpeas, spices, salt and cook for a minute. Add the cooked pasta and mix well until combined. Transfer to a serving plate and sprinkle chopped herbs and red chilli flakes. Serve hot and enjoyy!!
