Make Crispy Salt and Pepper Chicken Wings Like a Chinese Takeaway At Home



The first time I ever tried salt and pepper chicken wings, I about 8 years old and was in my uncle’s restaurant called the Golden House, let just say from day ones I’ve been hooked, literally I have to get 2 portions just for myself when ordering out, as we say in the videos, crispy salt and pepper (off the bone) isn’t done like this, and we have shown you a salt and pepper chicken wing recipe before but it’s totally different from this style, found in our first cookbook.

Ingredients
The chicken wings
500g chicken wings
2 tsp salt
1 tsp MSG https://www.chinandchoo.com/product-page/monosodium-glutamate-msg-150g
1 tsp sugar
1 tsp 13 spice (or 1/4 tsp 5 Spice https://www.chinandchoo.com/product-page/zheng-feng-five-spice-powder-100g ) https://www.chinandchoo.com/product-page/chinese-13-spices-mix-45g
1 tsp garlic powder https://www.chinandchoo.com/product-page/garlic-powder-100g
1/2 tsp white pepper
30ml water (used in case your chicken doesn’t release water)
6 head tbsp potato starch https://www.chinandchoo.com/product-page/potato-starch-500g
1 tsp chilli flakes (optional)
Veg oil to deep fry in

Finishing
3 chopped spring onions
5 finely chopped cloves of garlic
1/3 finely sliced carrot
3/4 sliced sweet chillies (mix of green and red, if you don’t like heat you can use diced green peppers)
1/3 tsp salt

1/3 tsp white pepper

3 tbsp veg oil

  4. Wowser for the Japanese collab! Well done Sir! You probably need no advice from an idiot like me on working there, but my experience was to be VERY clear if you are trying something even vaguely experimental, but may wish to make adjustments as you go. If you tell Japanese people precisely what you want, that's exactly what you'll get! Be prepared for them being majorly pissed off with you if you then try to move the goal posts later. They are very proud and dignified people, with high expectations of the same deportment from others – known as 'gaigin' – outsiders/foreigners or strangers. Have an amazing journey, and look forward to viewing the results! Safe travels man …!

  8. I personally loved salty foods but for about the past year I cant stand them. Even bloody KFC has become to salty for me. The other day I bought a pack of smiths crisps and they were bloody to salty for me. I used to buy salt and pepper calamari and squid all the time now the salt is too much for me. No issues with MSG though.
