Crockpot Sweet Potato & Ground Beef Chili | Hearty Fall Dinner That’ll Fill You Up

🛒 Ingredients:
1 lb ground beef
2 medium sweet potatoes, peeled & diced
1 can (15 oz) black beans, drained & rinsed
1 can (15 oz) kidney beans, drained & rinsed
1 can (14.5 oz) fire-roasted diced tomatoes
1 bell pepper, diced
1 small onion, diced
2 cups beef broth
1 tsp ground cumin
1 tsp mild chili powder (adjust to taste)
1 tbsp maple syrup or honey
Salt & pepper, to taste

👩🏽‍🍳 Instructions:
Brown the beef: In a skillet over medium heat, cook ground beef with a pinch of salt and pepper until fully browned. Drain excess fat.

Add to crockpot: Transfer beef to your slow cooker.

Add remaining ingredients: Sweet potatoes, beans, tomatoes, bell pepper, onion, broth, cumin, chili powder, maple syrup, and a little more salt. Stir well.

Cook: Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until sweet potatoes are tender.
Serve: Top with shredded cheese, sour cream, avocado, or cornbread.

💡 Tips:
Want lighter flavor? Swap beef broth for chicken broth.

Add ½ tsp smoked paprika for a hint of smokiness.

Great for meal prep — store in the fridge up to 4 days or freeze up to 3 months.
