Eggplant, Bell Pepper & Miso Stir-Fry with Pork
Ingredients (Serves 2–3)
Ground pork …… 350 g
Eggplants …… 3
Bell peppers …… 5
Sesame oil …… 1 tbsp
〔Seasoning〕
Miso paste …… 2 tbsp
Sake …… 1⅓ tbsp
Mirin …… 1⅓ tbsp
Sugar …… ⅔ tbsp
Soy sauce …… 1 tsp
Garlic …… 1 clove (grated)
Ginger …… 2 cm piece (grated)

Instructions
1.Cut the eggplants into chunks. Remove the stems and seeds from the bell peppers, then cut them into bite-sized pieces.
2.Heat sesame oil in a frying pan and cook the ground pork until browned.
3.Add the eggplants and stir-fry until slightly softened.
4.Add the bell peppers and continue stir-frying until everything is cooked through.
5.Add the seasonings and stir-fry quickly until the flavors are well combined.

Tips
Eggplants absorb oil easily, so be careful not to overcook them.
Once the seasonings are added, stir-fry over high heat to bring out the aroma.
