INGREDIENTS
2 LBS. 80-20 lean ground beef (Pasture Raised, Step 4)
1 LB. stew meat cut into cubes (Pasture Raised, Step 4)
1/4 CUP flour (I used steel cut wheat flour)
1 (28 OZ.) can diced fire-roasted tomatoes
1 (16 OZ.) can tomato sauce
1 (15.5 OZ.) can pinto beans, rinsed and drained
1 (15.5 OZ.) can kidney beans, rinsed and drained
1 (15 OZ.) can black beans, rinsed and drained
2 TBSP chili powder
2 TBSP minced garlic
1 TSP oregano
2 TBSP of garlic powder
2 TBSP of onion powder
1 PINCH ground cumin
2 OZ. semisweet chocolate
1 TSP coffee grounds
1/2 TBSP sugar
1 (4.5 OZ.) can chopped green chilies
1 small yellow onion, diced into small pieces
1 small red onion, diced into small pieces
3 medium carrots, diced into small pieces
3 stalks of celery, diced into small pieces
3 stalks of green onion, diced into small pieces
1/2 CUP of Worcester sauce
1 CUP beef broth
8 OZ. sour cream
8 OZ. cheddar cheese
*you can also add bell pepper and/or corn to the recipe if that’s your jam
DIRECTIONS
Step 1
Dice all of the carrots, celery, yellow onion, red onion and green onion and set aside.
Step 2
Cook and stir ground beef in a large skillet until completely browned, 10 minutes; transfer to slow cooker.
Step 3
Brown the stew meat cubes in a large skillet until completely browned, 10 minutes; transfer to slow cooker.
Step 4
Add flour over the stew meat to trap in flavor.
Step 5
Stir in the fire-roasted tomatoes, tomato sauce, pinto beans, kidney beans, black beans, chili powder blend, minced garlic, oregano, garlic powder, onion powder and cumin with the ground beef and stew meat in the slow cooker.
Step 6
Stir in the semisweet chocolate, ground coffee and sugar. *If you add the half tablespoon of sugar your chili will not be bitter or coffee-flavored at all. But do not skip that sugar.
Step 7
Next add the green chilies, yellow onion, red onion, carrots, celery, and green onion [also bell pepper and/or corn if you want – optional]
Step 8
Next add the Worcester sauce and beef broth, pouring evenly over the top.
Step 9
Cook on Low for 8-9 hours in the slow cooker
Step 10
Top with sour cream and cheddar cheese.
Ready to eat.
