*Chile verde stew, popular in the southwest, also known as green chile stew, is a classic comfort food characterized by tender meat braised in a savory, vibrant green chile sauce. It’s a versatile dish with numerous recipe variations, allowing for customization of spiciness and ingredients

Ingredients
3 pounds of pork shoulder
6 minced garlic cloves
1 tsp sea salt
1/2 chopped, medium onion
3 Tbsp AP flour
2 Tbsp Lard or oil
1 tsp ground cumin
1 tsp black pepper
1/2 Tbsp Mexican oregano (or 1 Tbsp if you love it)
2 cups chicken broth
8 chopped, hatch chiles verdes (6 mild + 2 Hot)
1/4 of a cup of chopped cilantro

-pressure cook 10 minutes with slow pressure release

  3. I love a thinner broth much of the time but when I want it thicker I mix in a little masa. I’ve even put a couple of corn tortillas in my Vitamix to make it thickener. I adore pork stew verde and the best I ever had was at a wonderful little restaurant (Maria’s) in Santa Fe, NM. I won’t forget that meal ever. I’ve never been able to duplicate.

  6. Looks great and the time savings make it something I can do in less than an hour. Only change I would make is to make a little lard roux (not much) and mix it into the sauce at the end to make it thicker like a regular pot-simmered version.

  7. My folks grew up in NM and this reminds me of my mom making chile verde in her Presto pressure cooker, which was one of my favorite wedding gifts from her. Even though I love the ease of use of my programmable one, I still reminisce about the sound of the valve rocking on my old one from 1970💞

  8. Miss hatch season in Houston. Loved picking them roasted from central market and I do the same thing as you – mix the mild and spicy to make my own medium. I freeze them to be able to make stew in the cooler months.

  13. I already have all the ingredients here at home. So tonight its Chile Verde! I have little potatoes and a zucchini from the garden so they are going in the stew too ❤
    I used my instant pot to saute and pressure cook. Then i used the slow cooker option to keep everything hot until my husband gets home from work. Love your instant pot recipes! Please show us more 😊
