Welcome to the kitchen! Today, I thought I’d share one of my favorite recipes: Chili. Not only is it the perfect comfort food, it’s super simple to make and involves a slow cooker. Let me tell you: if you want to simplify your life and not spend hours in the kitchen the slow cooker is your friend. You can find a variety of slow cookers/crock pots on Amazon. Ideally you should get a programmable so you can set the start or/end time to your liking:
Ingredients:
2 cups of carrots
2 cups of corn
1.5 cup of celery
1 medium size onion
2 cloves of chopped garlic
1lbs red beans
1 lbs crushed or pureed tomatoes
2 tsp dry oregano
3 tsp of Mexican style chili powder
.5 tsp cumin
.5 tsp salt
.5 tsp black pepper
1 to 2 cups of water
The meat of your choice
Place meat at the bottom of the slow cooker, then beans, then veggies, mix spices with tomato sauce/crushed tomato sauce and then pour. Add 1 or 2 cups of water. Mix sauce and veggies a little so water so the sauce can reach the meat. Ideally let simmer for at least 6-8 hours on a low setting.
