White Chicken Chili Recipe | Cozy Game Day & Tailgate Favorite



Welcome back to Hillside Farm! Today Heather and I are cooking up one of my longtime family favorites — a hearty White Chicken Chili that’s perfect for game day, tailgates, or cozy fall evenings at home.

Ingredients
– 2 pounds ground chicken (or turkey)
– 2 onions, chopped
– 4 garlic cloves, diced
– 2 teaspoons cumin
– 2 teaspoons chili powder
– 1 tablespoon ground fennel (or fennel seeds, ground in a mortar and pestle)
– 2 teaspoons oregano
– ½ teaspoon crushed red pepper (optional)
– 2 tablespoons olive oil
– 4 tablespoons flour (to create a roux and thicken)
– 8 cups chicken stock
– 2 cans great Northern beans, rinsed and drained
– 2 cups chopped spinach (fresh or frozen)
– 1 teaspoon salt
– 2 cups shredded cheddar cheese (for topping)

Directions
1. Sauté the onions: In a large pot, heat olive oil and sauté chopped onions until translucent.
2. Add the chicken: Stir in ground chicken and cook until no longer pink.
3. Season: Add garlic, cumin, chili powder, ground fennel, oregano, red pepper, and salt. Stir well to combine.
4. Thicken: Sprinkle in flour and stir until it coats the mixture, creating a roux.
5. Add liquids: Pour in chicken stock and bring to a simmer.
6. Beans and greens: Stir in beans and chopped spinach. Simmer until spinach is wilted and chili thickens to your liking.
7. Serve: Ladle into bowls and top with cheddar cheese, avocado, cilantro, sour cream, or crushed tortilla chips.

  1. Wait, what? The video just ended there. Was that error in editing or was it how it was meant to end there? I really wanted to see the finished chili plated.

What I like more than your cooking is the "American" way of life that you showcase (the discussions around football teams :-)…so US!). I appreciate your family life (I have 4 children), the reflections it inspires in you and the expression of your faith. Bravo!
