*pozole: a hearty, traditional Mexican stew made from hominy (large, dried corn kernels) and meat, typically pork or chicken.

*You can easily substitute the protein to your dietary preference, be it pork, beef, chicken, fish, tofu, or beans.
Ingredients
9 cups of water
1 tsp salt
3 pounds of pork butt
2 pounds of pork feet
1 onion
8 garlic cloves or half a garlic bulb
8 bay leaves
3 Tbsp chicken bouillon
1/2 Tbsp ground cumin
1/2 Tbsp black pepper
8 posted green chiles (or 4 (4oz) cans green chili
– Roast 3 extra if you want to add at the end
5 cups pre-cooked hominy from a can
1 Tbsp Mexican oregano
For enhancing flavor, use 1 Tbsp instant corn masa and slowly add enough water to resolve
Top with fresh chopped onions, cilantro, and lime

If you would try calves liver , floured and not cooked to death, in a pan with lots of caramelized onions, i bet youād like it. I never liked liver till I had it cooked this way. My sweet mom would cook it till it was mush and I hated it,lol. Then I tried it at The Pink Pony Restaurant in Mesa Arizona and I was hooked. I now make it in my home now and yum! P.s. a little bacon in it is good too,lol

This reminds me of my mom's Chile Verde Pozoleš I loved her liver & onions too. I put chopped chicken livers in with the beef in my Bolognese Lasagne and I've always gotten rave reviewsš
