Ingredients:
2 Skinless Boneless Chicken Breasts
2 Cups of no sodium chicken broth or low-sodium chicken stock
1 Large Poblano Pepper
1 Large White Onion
1 Can of Bush’s White Chili Beans in Mild Sauce
1 Can of Fire Roasted Corn Kernels
1 tbsp of ground cumin
1 tbsp of ground coriander
1 tbsp of garlic flakes or garlic powder
1 tbsp of kosher salt***You may add this at the end to taste***
1/2 tbsp of ancho chili powder
1/2 tbsp of dry oregano
1 pack of McCormick White Chili seasoning.
Optional: 1 tsp of Ac’cent(MSG)
Directions:
Begin by cutting up your chicken in cubes. Be sure to cut across the grain of the chicken breast to make the chicken breast more tender once it is cooked. Chop the poblano pepper and white onion. In a pot with a heavy bottom, brown the chicken breast and soften the poblano pepper and white onion. Add in the chicken broth and begin to simmer the white chicken chili. Add to the white chicken chili half of the chili beans, the corn kernels, McCormick White Chili seasoning, ground cumin, ground coriander, garlic flakes, ancho chili powder, oregano, Ac’cent. With the reserved chili beans, mash them to form a bean paste. Add the bean paste into the white chicken chili. Adjust the white chicken chili with salt and pepper to taste. Allow the chicken to simmer while stirring occasionally. Serve the white chicken chili with corn chips or corn bread and enjoy!
