  9. I would likely my happy with any of them, but do prefer the skin to be roasted off… Blacken the skin of the Chile, hold for 10-20 minutes in a wet towel or wet paper towel and wipe off the charred skin. There will be a smokey flavor left and the chile soft / cooked.

    I like my rellenos dry, but a side of salsa is always welcome and smothered isn't bad, just not my favorite.

    All in all 3 solid dishes. The chile skin can be a little hard to digest is all.

  11. Fluffiness comes from the egg white being beat…I think there might be some baking powder in the batter as well, but maybe not very much. Folding the egg whites into the batter is the challenge.

    I think the yolks and four/ baking powder get whipped together and the beat egg whites folded in to add lift to the batter. I could be mistaken, but this is what I remember seeing a few times.

  14. This is a tough recipe to get right. Most restaurants I've tried (and I grew up in New Mexico) simply don't get it. These ladies know what they are doing and I would happily eat any of their versions of this dish.

  16. This is my favorite favorite dish, but i will admit i am lazy and do buy the frozen, however my favorite sauce for them is a Serrano salsa from HEB. The combo of serrano and poblano is so amazing, Humble House actually makes a sauce featuring those 2 peppers and again, i get it at HEB LOL, no i don't work there >^.^<

  17. Interesting. We always used roasted New Mexico Chilies for Chili Rellenos and some we would make with meat and sometimes we would use eggrolls to wrap the chilies and cheese. If we used roasted poblanos that was called “Stuffed Poblanos” and sometimes they were coated and sometimes not.

  18. I love how genuine they are in their appreciation for each other's dishes and the recognition they give for the work that's gone into the preparation of them. It's always a joy to see episodes like this.

  19. I had a lovely coworker, she grew up in Mexico City and was a fabulous cook. She’d bring me food almost daily and her chile relano is hands down the best to ever exist. It was stuffed with meat and cheese and I’ve never found one anywhere near as good. She also made the best creamy green salsa. And her tortas, omg ❤ She really spoiled me.
