Healthy Capsicum Omelette Flower Kids Would Love!



Yolks nestled inside red & yellow capsicum rings, with egg whites around them—finished with nigella seeds and fresh coriander ā€œpetals.ā€

Steps:

Lightly butter a non-stick pan and warm over low heat.

Slice rings from the tops of yellow and red capsicums. Set two rings side by side in the pan, leaving the centres empty. Cook for ~30 seconds.

Pour in the egg whites, filling the space around the capsicum rings but keeping their centres clear.

Gently drop one egg yolk into the centre of each ring.

Arrange fresh coriander sprigs so they fan out from the centres, like flower petals.

Cover and steam on low heat for ~1 minute, until the whites begin to set.

Uncover and sprinkle a few black seeds (nigella/kalonji) over the yolks.

Season with salt and black pepper, then serve.

Tip: Keep the heat low so the whites stay tender and don’t brown.
