Basting steak is bullshit. Don't work at all.
A really great chef once taught me not to season a steak with coarse salt because it lifts the steak off the pan and doesnāt allow for it to get a nice sear. Course salt is more for finishing certain dishes.

You shouldn't really put black pepper on your steak at least not when searing it. The black pepper will just burn.

Use avocado oil instead. Itās neutral and has a much higher flashpoint. Means a lot less smoke. I used it just the other night when doing a reverse sear. Delish.
