BBQ Smoked Chili Con Queso

Smoked Chili Con Queso on the Pitbarrel Cooker. Ingredients are below. Once combined this took about an hour or so to get fully melted. The Gouda took a little longer to melt. In the video I forgot to mention I browned the meat with some taco seasoning.

I’ve done recipes like this before but with a crockpot so as a queso/ nacho cheese fan to do it on the BBQ smoker, it was awesome! Shout out to Doug Scheiding and Traeger for the recipe and sorry for butchering the credit they deserve. In the end there’s so many recipes and different ways to do queso so I wouldn’t worry about recipes or ingredients too much and just do what you like. That’s what we did and it turned out awesome. The family enjoyed and we’ll be smoking it again.

Ingredients:

1lb of ground beef; cooked and seasoned with Taco seasoning
1 block of Velveeta
1lb or more of Gouda
2 can Rotel
1 can Cream of Chicken
3/4 bunch of Cilantro
