HIGH-PROTEIN TURKEY CHILI RECIPE
1 teaspoon olive oil
1 yellow onion, chopped
1 green bell pepper, chopped
3 cloves garlic, minced
2 tablespoons chili powder
2 teaspoons oregano
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon onion powder
1/2 teaspoon sea salt, more to taste
2 chipotle peppers in adobo sauce, chopped
Tablespoon tomato paste
1 pound extra lean ground turkey or chicken (99%)
1 (15oz) can petite diced tomatoes
2 cups low-sodium chicken broth (add more if needed)
1/2 cup canned corn
3 cups kale, cut into thin ribbons or chopped

For topping: cheese, avocado, tortilla chips, cilantro, sour cream

Heat oil in a large pot over medium heat. Add in onion, garlic, pepper, and a pinch of salt. Add the spices and sauté for 5-7 minutes, stirring frequently.

Add the ground turkey and break it up into small pieces; cook until the meat is opaque and no longer pink.

Next, add in tomatoes and chicken broth. Bring to a boil, then reduce the heat and simmer for 15 minutes, allowing the chili to thicken and flavors to come together.

Add the corn and greens, and cook until the greens have wilted. Serve and enjoy!

Garnish with what you love!

  1. Great recipe, I cant eat beans either so a meat/turkey/bison chili is great. 
    I personally would never add corn bc the body cant digest corn so maybe it's just the chew factor, or as you said a touch of sweet. I also wouldn't add kale bc of the oxalates.

  2. I am not a fan of chili because i dont like beans or tomatos in large quantities but this looks delicious and honestly just taking out the crushed tomatos it turns into a nice soup base recipe. Ill definitely experiment with this!

  7. I buy my tomato paste in a tube too! But when I must buy canned, I also portion out by tablespoons and freeze. But I love using the tube the most!! These are usually stocked by the other tomato products.

  12. I just made this for dinner and it is excellent! Love the extra lean turkey and the chipotle peppers! I added a can of lentils and omitted the corn this time. For toppings, I went with avocado, tortilla chips, and Greek yogurt. My husband and I loved it! Thank you for sharing this 🙂❣
