Lemon Pepper Wings & Mocha Blondies – Sweet & Spicy Food Diaries Treats!

The ideal combination for tea-time treats, party platters, or weekend snacking — simple, quick, and absolutely delicious.

✨ Recipe Card:
Lemon Pepper Wings
Ingredients :
1 kg chicken wings, separated into drumettes
1 tablespoon baking powder
1 teaspoon salt
1 teaspoon garlic powder
1 tablespoon oil
Lemon Pepper Sauce:
3 tablespoons unsalted butter
1½ teaspoons black pepper
Zest of ½ lemon
Juice of 1 lemon
1 teaspoon honey
1 tsp hot sauce
Method :
Toss wings with baking powder, salt, garlic powder and a bit of oil. Place wings on a wire rack over a baking sheet. Bake at 200 degrees for 30 minutes, flipping halfway, until golden and crispy. Mix melted butter with lemon zest and juice, black pepper, honey and hot sauce. Toss hot wings in the sauce until evenly coated. Serve immediately.

Mocha blondies
Ingredients:
2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
196gm unsalted butter, melted
3-4 teaspoons coffee
1 1/2 cups brown sugar
1 egg
1 egg yolk
1 Tablespoon vanilla essence
1 cup chocolate, chopped
Espresso Glaze:
1/2 teaspoon coffee
1 Tablespoon warm water
3/4 cup icing sugar
1 Tablespoon milk or cream

Method

Mix the flour, baking powder and salt. Mix the melted butter and coffee powder together. Add in the brown sugar, egg, egg yolk and vanilla essence. Pour the wet ingredients into the dry ingredients and whisk until combined. Fold in the chocolate. Evenly spread batter into a greased and lined pan. Bake at 180 degrees C for about 30-35 minutes, or until a toothpick comes out mostly clean. Remove from the oven and cool blondies completely in the pan set on a wire rack.
Mix the coffee powder and warm water together. Add in the icing sugar and milk or cream. For thinner glaze, whisk in more milk or cream. For thicker glaze, whisk in more icing sugar.
Drizzle over cooled blondies. Cut into squares.
