Easy Chile Relleno Casserole (One-Pan Roasted Poblano, Egg & Cheese Bake)



This easy Chile Relleno Casserole has all the flavor of classic chiles rellenos – roasted poblano peppers, melty cheese, and a zesty tomato-chile sauce – baked into a simple one-pan casserole with eggs. No deep frying, just big, bold flavor you can serve for breakfast, brunch, lunch, or dinner.

In this video I’ll show you how to:
– Build a quick skillet sauce with tomatoes, onion, garlic, and spices
– Layer the roasted chiles, cheese, and eggs into a hearty chile relleno bake
– Customize the heat level with jalapeños (or go hotter with serranos or habaneros)
– Add protein like Mexican chorizo, shredded chicken, ground beef or pork

This is a great make-ahead Mexican-inspired casserole that’s naturally low carb and easy to make gluten-free. Serve it with warm tortillas, beans, rice, or just a splash (or three!) of your favorite hot sauce.
