When it’s chilly out, I’m making chili. This white chicken chili is creamy, hearty, and just the right amount of spice!
WHITE CHICKEN CHILI
– 2 tbsp oil
– 2 chicken breasts
– 1 onion, chopped
– 3 garlic cloves, chopped
– 1 celery stalk, chopped
– 1 yellow pepper, chopped
– 1 jalapeño, chopped
– 2 tbsp flour
– 1/2 tsp cumin
– 1/2 tsp salt
– 1 tsp chili powder
– 1 can white beans
– 1/2 cup corn
– 1 1/2 cups chicken stock
– 1 cup salsa verde
– 1/2 cup cream or cashew cream
– Salt & pepper
– Cilantro, tortilla chips to top
HOW TO:
– Heat oil and season chicken with salt and pepper.
– Brown chicken on both sides, then remove from pot.
– Add more oil, then sauté onion, garlic, and chopped veggies.
– Sprinkle in flour and spices.
– Stir in beans, corn, stock, and salsa verde.
– Add chicken back in, bring to a boil, then cover and simmer until cooked.
– Remove, shred, and return to pot with cream.
– Top with cilantro and crushed tortilla chips!
