Ingredients
• 1 eggplant
• Olive oil
• 1 red bell pepper, diced
• 1 green bell pepper, diced
• Fresh dill, minced
• 1/2 cup crushed walnuts
• 1 block cream cheese
• Salt & pepper to taste
Directions
1. Slice the eggplant into round slices.
2. Heat a pan and drizzle in olive oil. Grill the eggplant slices on both sides lightly.
3. Dice the red and green bell peppers, mince the fresh dill, and crush the walnuts.
4. In a bowl, combine the cream cheese with 1 cup diced red bell pepper, 1 cup diced green bell pepper, ½ cup minced dill, and ½ cup of crushed walnuts. Season with salt and pepper and mix until creamy and well combined.
5. Add a generous spoonful of the cream cheese mixture onto each grilled eggplant slice. Fold the slice like a taco.
6. Roll the open cream cheese edge in the minced dill so it coats it.

If you salt both sides of the eggplant and let the moisture draw out for 10-15 mins, wipe off the moisture and salt with a paper towel, and then do your recipe, the eggplant comes out so nice
