Try This Simple Vegan Chili Tonight



Packed with flavor, this easy vegan chili is a quick and easy soup recipe for a cold night in.

Ingredients
5 cloves of garlic
1 yellow onion
1 jalapeno
2 cups of vegetable broth
56oz of canned diced tomatoes
8oz of canned green chilis
15oz of white beans (I’m using cannellini)
1 tsp of onion powder
1 tsp of garlic powder
1 tsp of paprika
1/2 tsp of oregano
1 cup of vegan cheese

Directions
1. Heat a large pot to medium high heat and add a small amount of oil. Mince garlic and slice onion and jalapenos. Add to pot and saute for 5 minutes.

2. Add vegetable broth, diced tomatoes, green chilis, white beans, onion powder, garlic powder, paprika, and oregano to pot. Mix well and simmer for 15 minutes. Remove from heat and let cool.

3. When ready to serve, portion chili into bowls and top with vegan cheese. Serve and enjoy!
