The people who should be making meal plans like this just get SNAP benefits and shop at Whole Foods. Meanwhile there are families who work their butts off, make just above the threshold to get government benefits, and have to budget their meals like this.

For that potato soup you should take 1/4 out and blend it. it will be more of a potato/corn chowder
Thanks for always inspiring us! I'm making the potato soup tonight. I had about 1/3 of a kielbasa in my freezer, some diy frozen corn from some I'd cut off the cob this summer, and I also had some carrots I needed to use up. So I added those things in cuz I dont have bacon and I bet it will be delicious. Thanks for always teaching us that we can use what we have, or spend not much but make super filling meals. I'm planning to top mine with sour cream and a bit of shredded cheese

Since I'm trying to lose weight, it is hard for me to think about anything but protein. On 15$ I'd have bought 60 eggs and 6 avocados for 30 meals and fasted the other 6.
I have diabetes. I wish I could eat that ramen noodle bowl. It's total crap ingredients but I miss it lol. Better for me that I don't eat it though. I try and stick with whole foods now, nothing packaged. So different than how I grew up !
I wanted to share a very silly thing I realized I started to do about 10 years ago. It has little to do with the subject but is it so fun…when I am in the grocery store line putting things onto the conveyor belt, I reach into the cart with my right hand and bring it up then swiftly throw it to my left hand which I leave over near or over the conveyor and place the items down. It is a fun tossing game I play. I almost always catch each super quickly tossed item. I don't know why I started or really when, but I've never seen anyone else do it and it is fun…ok. I admit I am 61 and I used to tell my kids my middle name was 'Silly' without realizing one of my daughters actually thought it was and shared my middle name with her visiting friend! (It is Adrienne, not Silly). Cans and thin pasta boxes, tomatoes, garlic heads are fun to toss. Yes, the occasional carefully tossed jar gets tossed, though never eggs or bread…mostly the less perishable items…

Julie, your chili looks like soup. Maybe you can cook it longer with the top off to reduce the water content. Or maybe add some cheese to it, some crackers to soak up the water. But Iām sure it was delicious.
If I were cooking and if I wanted my chili thicker, there are many ways to do it. I might add cornstarch to cold water, stir, add that mixture. I might throw an extra can of beans (if I had them) into a blender with some seasonings, blend, and add that. Or I might just keep boiling for awhile with the lid off, let some of the liquid evaporate. Lots of possibilities for the picky people lol
