I like this recipe. But when it came to ingredients that can be left out or to use as little or much as you want, the green onion was the only ingredient that was referred to as how much. Why is it that the one vegetable that Americans like the least, chefs, have a conspiracy that onions are a must-have? I personally would like every ingredient in a recipe and couldn't wait to dig in. But one mention it has onions of any kind, I'd lose my interest altogether and wouldn't touch it. I'd know what I'd be missing out on. And I'd be fine with it.

Hi Flo! One buck a wing? That's currently 62 Eurocents over here – OMG! Prices are up in Germany as well, but mostly due to improved standards in lifestock farming (e.g. bio and more space and/or outdoor run). In restaurants also labor-cost is driving prices up.
That's why your receipe is highly appreciated. Up to now I did chicken wings mostly tex-mex style, but I will try your seasoning immediately. But I will stick to the buffalo wings way of cooking the wings. I do not cover them with starch or add any oil. The wings we get here have enough fat under the skin.
I put them on stainless steel BBQ-trays (those with ridges that drain away the fat). Bought them for the BBQ to avoid dripping fat catching fire, but they work also pretty well in the oven.
Our ovens usually have top/bottom as well as convection heating. Convection is pretty much like a giant air-fryer. That's why I first did not understand why air-fryers are trending.
For the wings I use covection. 160°C (320°F) for 30minutes and then 15 minutes 180°C (356°F). 5 minutes before finish I additionally turn up the top heat at 275°C (527°F) and watch carefully not to burn the wings.
That creates a super crispy skin without the extra oil an carbohydrate layer. At least I will give it a shot that way. If it doesn't work out I will remorseful do it your way😉.

Awesome!! I just did this and now i am eating these tasty wings with beers and watching movies. I will do this again tomorrow night for Thursday Night Football. And again on Sunday for some good NFL games.
I order this a lot at a Toisan style chinese restaurant for takeout… it's all Flats in this style, my fave part of the wing tbh, and salt and pepper style anything is pretty much amazing!
