ROASTED BELL PEPPER SOUP
This vibrant Roasted Bell Pepper Soup combines red and yellow bell peppers with roasted garlic and lightly charred onion for a deep smoky flavor. It’s creamy, comforting, and perfect as a light winter appetizer or starter. The roasting enhances natural sweetness while adding a subtle smokiness that makes it special. Ingredients:
As Required – Oil (तेल)
1 large – Red Bell Pepper (लाल शिमला मिर्च)
1 large – Yellow Bell Pepper (पीली शिमला मिर्च)
1 medium – Onion (प्याज)
6–7 Cloves – Garlic (लहसुन)
As Required – Water (पानी)
1 tbsp – Butter (मक्खन)
To taste – Salt (नमक)
To taste – Black Pepper Powder (काली मिर्च पाउडर)
Method:
1. Place red and yellow bell peppers directly over a gas burner flame or a grill mesh and roast until skin is blistered and charred in spots, rotating frequently for even roasting.
2. Transfer roasted bell peppers to a covered bowl for 10–12 minutes.
3. Peel off the charred skin carefully, leaving small charred specks for smoky flavor.
4. Remove seeds and stems, and then roughly chop the flesh.
5. Roast garlic cloves (with skin) and onion halves lightly on the burner or mesh until slightly charred.
6. Peel garlic and onion once cooled.
7. In a blender, combine roasted bell peppers, roasted garlic and onion. Add some water and blend until smooth.
8. Pour the blended soup into a pot/pan and add more water to adjust the consistency.
9. Now add salt and black pepper powder to taste and let it simmer gently for 5–7 minutes.
10. Add 1-2 tbsp of fresh cream for a creamier soup and 1tbsp of butter for richness.
11. Ladle soup into bowls and serve hot for a smoky, flavourful winter soup.
