Keto Ginger & Red Peppers Pork Stir-fry
Makes 1 Servings
9.2g NC per Serving
8oz Pork Shoulder with fat (cubed)
125g Sweet Red Peppers (sliced)
2 Tbs Chicken Fat or Coconut Oil
1/8 tsp Ground Ginger
1/8 tsp Hot Pepper Flaked
1 Tbs Coconut Aminos
Sauté peppers in oil until browned. Salt to taste.
Place cubed pork in gallon baggie. Pound cubed pork with metal meat tenderizer until flat.
Remove peppers from skillet. Cook pork in skillet until done. Salt to taste.
Return peppers to skillet. Add ginger, hot peppers & coconut aminos. Sauté briefly.

Looks delicious! Judith, do you have to cook coconut aminos or can you eat straight from the bottle? I've never tried it.
