Method
1. Prepare Pastes
• Grind garlic, ginger, green chilli, cumin seeds, fennel seeds, and black pepper into a coarse paste.
Grind green peas separately into a coarse
paste. Keep aside.
2. Cook the Filling
Heat oil in a pan.
Add the masala paste and sauté for 30-40 seconds.
Add besan and hing, mix well and cook for 1 minute.
Add turmeric powder, sabji masala, and red chilli powder. Mix well.
Add the ground green peas and mix properly.
Season with salt, black salt, and aamchur powder.
Cook on medium flame for 4-5 minutes until the mixture becomes thick and aromatic.
Turn off the flame and let the filling cool completely.
3. Prepare the Dough
In a bowl, add maida, salt, ajwain, and ghee. Rub well until crumbly.
Add water gradually and knead into a firm dough.
Cover and rest for 10-15 minutes.
4. Layer & Shape Kachori
Divide the dough into portions. Roll into small rotis.
Apply ghee, sprinkle little dry maida, fold to create layers (as shown in the video).
Place prepared matar filling in the center and seal properly.
5. Fry the Kachori
Deep fry in medium-hot oil on low to medium flame until golden and crisp.
6. Serve
Serve hot layered matar kachori with green chutney or imli chutney.
