SOUTHERN BLACK-EYED PEAS TRADITIONAL
(New Year’s Style with Smoked Turkey)
Ingredients
* 1 lb dried black-eyed peas (rinsed, soaked overnight or quick-soaked)
* 1–2 smoked turkey leg, wings, or necks
* 1 small onion, diced
* 1 bell pepper, diced (optional but traditional)
* 3 cloves garlic, minced
* 8 -10 cups water or chicken broth
* 1 tsp salt (adjust later)
* 1 tsp black pepper
* ½ tsp paprika
* ½ tsp garlic powder
* ½ tsp onion powder
* Pinch of cayenne (optional)
* Bay leaf (optional)
Instructions
1. Add smoked turkey to a large pot with water/broth. Bring to a boil, then simmer 30–40 or about 1 hour if using a turkey leg, to release flavor and tenderize the meat.
*Shred the meat.
2. Add peas, onion, bell pepper, garlic, and seasonings.
3. Bring to a boil, reduce heat, cover, and simmer 1–1½ hours, stirring occasionally.
4. Taste and adjust salt near the end.
5. Serve with rice or cornbread.

I don't soak my peas that way they want become mush and a country ham hock
