  2. Tofu doesnt really taste like anything… and no, i use beef powder or pork bullion cubes. I will always have some knorr cubes and assi beef flavor "soup stock" in my cupboard. I cant be saving bones all the time. My freezer cant hold that much

  3. chicken powder, soy sauce, garlic, ginger, fish sauce, sesame oil or some rendered pig fat. basis for my noodle dishes. the chicken powder may be replaced with pork or beef.

  6. I use beef cubes all the time. Even when I'm already simmering a pot of nice shanks for beef soup. I'll put atleast a cube. Need a qyick and easy gravy from scratch? Stock cube. We just have to be mindful about how salty the dish is after but stock cubes are so helpful.

  8. The only time I have ever consistently made stock from scratch is at work. The only time I make stock from scratch at home is during the holidays, IF I'm the one cooking the turkey.

  9. I'm disabled so things like frozen dumplings and chicken powder is a lifesaver for me. I cant be up and mobile that long, so I have to take shortcuts if I don't wanna be in debilitating pain the whole day. I love to make soups like this where its mostly just dumping stuff into a pot. I tend to use ginger powder instead and cut up my green onions with scissors. Its not as good as a broth made over a long period of time, but its still tasty and helps me eat when I dont have strength. Thanks for sharing accessible recipes!

  10. I just make fresh vegetable broth. Tastes good and it's super easy+quick to make. If I have no time at all, I keep frozen stock in the freezer for those times or I buy a carton of stock at the store.

  14. As a chronically ill girly, I have been known to take a shortcut. Sometimes I have the energy to stand and chop veggies, and sometimes I grab a frozen mirepoix blend from Kroger. Life is about balance. 😂

    Why? Because we aint a restaurant that, back in his days, paid enough people to have fresh stock and the best ingredients all the time. We are a normal home kitchen and in making fresh food, you are ahead of a lot of different households, that never learned cooking.

    So i fully agree. Shortcuts are the way cooking is accessible. And i love it.

  17. All the time! I'm getting another degree while working a full-time job—I take all the short cuts i can. One day, i hope to once again have the time and freezer space to make stock from scratch, but that day won't be in 2026. 😂

  18. Protip, add a bunch of whole peeled garlic cloves to your chicken powder base. I learned this by sneaking around the trash cans of my favourite local noodle-soup place.
