CHILI CHEESE BOWL



Ingredients

Chili
Ground beef (80 / 20)
1 yellow onion
1 poblano pepper
1 jalapeño (seeded for mild)
Garlic
3 tbsp tomato paste
3 tbsp ancho chili powder or quality chili blend (see homemade recipe below)
1 cup of amber beer or lager OR 4 tbsp dry vermouth
1 can (28 oz / 800 g) fire roasted crushed tomatoes
A few chipotle peppers in adobo (adjust to preference)
2 cups beef stock
1 bay leaf
2 cans (15 oz) beans (I used a mix of pinto, red kidney, and black beans)
Salt
1 tbsp fresh lime juice

Optional:
-1-2 tsp brown sugar
-1 tsp cocao powder

For assembly:
Small sourdough boules
Unsalted butter
Garlic
Parsley
Shredded cheese such as sharp cheddar or Monterey/Colby Jack)
Scallions

For the Homemade Chili Blend
Toast and grind whole cumin seeds and whole coriander seeds

Add:
-Mexican oregano
-Paprika
-Smoked Paprika
-Cayenne pepper-Black pepper
-Pinch of cinnamon

P.S. Feel free to omit the beef for a vegetarian option 😊

P.P.S. You can also deglaze with just stock instead of alcohol
