Loaded Cheesy Omelette | Crispy Potato, Spinach & Bell Peppers — Easy Indian Breakfast Recipe
This stuffed omelette is fluffy, crunchy and full of melted mozzarella — perfect for a quick weekday breakfast or brunch. In this video I fry thin potato slices until golden, whisk eggs, fill with spinach, tomatoes and colourful bell peppers, season and load it with mozzarella — then fold and serve!
📌 Ingredients:
– 2 eggs
– 1 small potato, thinly sliced
– Handful chopped spinach
– 1 small tomato, chopped
– Red & yellow bell pepper, chopped
– Mozzarella (lots!)
– Salt, black pepper, red chili powder
– Oil / butter for frying
