Chicken Stir-Fry with Rice & Vegetables

Ingredients

* Minced chicken
* Olive oil
* Spanish herbs
* Salt (to taste)
* Red bell pepper (chopped)
* Yellow bell pepper (chopped)
* Capsicum (chopped)
* Onion (sliced)
* Basmati rice

Method

1. Heat a grilled pan and add a little olive oil.
2. Add the minced chicken and cook on medium heat until it turns golden and well cooked.
3. Sprinkle Spanish herbs and salt. Mix well and let the flavors come together.
4. Add onion and sauté until soft.
5. Add red and yellow bell peppers and capsicum. Stir-fry for a few minutes until slightly tender but still crunchy.
6. Serve hot with freshly cooked basmati rice.

Tip:
You can add a squeeze of lemon or a pinch of black pepper at the end for extra flavor.
