_Ingredients:_
– 4 red bell peppers
– 1 cup crumbled feta cheese
– ¼ cup sour cream
– ½ cup grated Pecorino Romano cheese
– ½ cup scallions
– ½ cup diced tomato
– ¼ cup chopped fresh parsley
– 1 minced garlic clove
– ½ tsp oregano
– 1 bag of peppermint tea
– 2 tbsp olive oil
– salt and pepper to taste

_Instructions:_

*1. Prep the bell peppers*
Preheat the oven to 350°F. Wash and cut each bell pepper down the middle in a T-shape without cutting through to the other side. Gently open and remove seeds and inner membranes, then set aside.

*2. Make the filling*
In a bowl, crumble the feta cheese, then add sour cream, diced tomato, scallions, parsley, garlic, oregano, grated Pecorino Romano, and the contents of one peppermint tea bag. Mix everything well together and season with salt and pepper to taste.

*3. Bake & serve*
Fill each pepper with a generous amount of filling, and place the stuffed peppers on a baking sheet. Drizzle with olive oil and bake for 20–25 minutes, until the peppers are tender and lightly browned. Serve with fresh parsley for garnish and enjoy!
