INGREDIENTS:
– 1 lb ground beef
– 1 can (14.5oz) diced tomatoes
– 1 can (15oz) kidney beans, drained
– 1 can (15oz) black beans, drained
– 1 medium onion, diced
– 3 cloves garlic, minced
– 2 tbsp gochujang (Korean chili paste)
– 1 tbsp chipotle in adobo, minced
– 1/4 cup kimchi juice
– 1 tbsp cumin
– 1 tsp smoked paprika
– Salt & pepper to taste
– Cilantro, sliced jalapeños, lime for garnish
DIRECTIONS:
1. Brown ground beef in large pot, drain fat
2. Sauté onion and garlic until soft (3 min)
3. Add gochujang, chipotle, cumin, paprika – stir 1 min
4. Add tomatoes, beans, kimchi juice
5. Simmer 30 minutes, stirring occasionally
6. Season with salt & pepper
